12 Years of Grilling Experience...

I have to admit I still have a difficult time grilling that perfect steak (I'm more of a pork guy I guess), although I have come a long way since my first feeble attempt at grilling meat.  I remember the first grill that I could really call my own.  Some friends bought it for my birthday shortly after I moved into my first apartment. It was a small portable charcoal grill, with which I almost burned down the complex.  Later I found out that charcoal grills were prohibited, probably because of guys like me.  I bought a bag of briquettes, a can of lighter fluid, and some hamburgers.  I filled the pan up with the briquettes, assuming that too much was better than not enough, and soaked them with lighter fluid until my eyes watered from the fumes. I don't recall if I actually dropped the match into the charcoal or if the fumes ignited from the spark of the match on the box, all I really remember was a bunch of black smoke and the smell of burnt hair and the manager asking about the fireball that shot out of my balcony. 

I believe I have come a long way since that summer evening on the apartment balcony.  I no longer have the charcoal grill, I traded for a small portable propane grill that was approved by the management.  I've gone through several different grills between then and now, both charcoal and gas.  But no matter what the grill one thing will always stay the same, food always tastes better when cooked over a flame!

These days I like to grill over gas, its quick, convenient, and perfect for steaks, chicken, and pork chops, although I still pull out the charcoal when I want to get that smoky flavor that only comes from wood.
